Ingredients

  • White fish fillets (e.g. cod, tilapia) - 300 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 4 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Red bell pepper - 1 medium, diced
  • Tomatoes - 400 grams, diced (canned or fresh)
  • Fish stock or water - 500 ml
  • Fresh cilantro - 1/4 cup, chopped
  • Fresh parsley - 1/4 cup, chopped
  • Harissa paste - 1 tablespoon (adjust for spice level)
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrot, celery, and red bell pepper to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Stir in the harissa paste, cumin, paprika, salt, and pepper. Cook for 1-2 minutes until fragrant.
  4. Add the diced tomatoes and fish stock (or water) to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
  5. Meanwhile, cut the fish fillets into bite-sized pieces. After the soup has simmered, gently add the fish to the pot.
  6. Simmer for an additional 5-7 minutes, or until the fish is cooked through and flakes easily.
  7. Stir in the chopped cilantro, parsley, and lemon juice just before serving. Adjust seasoning as needed.
  8. Serve hot, garnished with additional herbs if desired.
