- Celery - 1 stalk, diced
- Red bell pepper - 1 medium, diced
- Tomatoes - 400 grams, diced (canned or fresh)
- Fish stock or water - 500 ml
- Fresh cilantro - 1/4 cup, chopped
- Fresh parsley - 1/4 cup, chopped
- Harissa paste - 1 tablespoon (adjust for spice level)
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon

Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, celery, and red bell pepper to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the harissa paste, cumin, paprika, salt, and pepper. Cook for 1-2 minutes until fragrant.
- Add the diced tomatoes and fish stock (or water) to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
- Meanwhile, cut the fish fillets into bite-sized pieces. After the soup has simmered, gently add the fish to the pot.
- Simmer for an additional 5-7 minutes, or until the fish is cooked through and flakes easily.
- Stir in the chopped cilantro, parsley, and lemon juice just before serving. Adjust seasoning as needed.
- Serve hot, garnished with additional herbs if desired.
