Ingredients

  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas, canned - 1/2 cup, drained and rinsed
  • Oat flour - 1/4 cup
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Whole grain burger buns - 2
  • Avocado - 1 small, sliced
  • Tomato - 1 medium, sliced
  • Red onion - 1/4, thinly sliced
  • Hummus - 4 tablespoons

Steps

  1. Preheat the grill or a skillet over medium heat.
  2. Cut the eggplant into 1-inch thick slices and sprinkle both sides with salt. Let sit for 10 minutes to draw out moisture, then rinse and pat dry.
  3. In a mixing bowl, combine the olive oil, minced garlic, cumin, coriander, paprika, cayenne, black pepper, and lemon juice. Brush this mixture on both sides of the eggplant slices.
  4. Grill the eggplant slices for 4-5 minutes on each side until tender and slightly charred.
  5. In a food processor, combine the grilled eggplant, chickpeas, oat flour, and chopped cilantro. Pulse until a chunky mixture forms, and then shape it into 2 patties.
  6. Wipe the skillet clean and return it to the heat. Add a little olive oil and cook the patties for about 4-5 minutes on each side until golden brown.
  7. Meanwhile, toast the burger buns until golden.
  8. Assemble the burgers by spreading hummus on the bottom bun, topping with the eggplant patty, sliced avocado, tomato, and red onion. Finish with the top bun.
  9. Serve immediately with your choice of side.
