Ingredients
- Eggplant - 1 medium (about 250g)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas, canned - 1/2 cup, drained and rinsed
- Oat flour - 1/4 cup
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Whole grain burger buns - 2
- Avocado - 1 small, sliced
- Tomato - 1 medium, sliced
- Red onion - 1/4, thinly sliced
- Hummus - 4 tablespoons
Steps
- Preheat the grill or a skillet over medium heat.
- Cut the eggplant into 1-inch thick slices and sprinkle both sides with salt. Let sit for 10 minutes to draw out moisture, then rinse and pat dry.
- In a mixing bowl, combine the olive oil, minced garlic, cumin, coriander, paprika, cayenne, black pepper, and lemon juice. Brush this mixture on both sides of the eggplant slices.
- Grill the eggplant slices for 4-5 minutes on each side until tender and slightly charred.
- In a food processor, combine the grilled eggplant, chickpeas, oat flour, and chopped cilantro. Pulse until a chunky mixture forms, and then shape it into 2 patties.
- Wipe the skillet clean and return it to the heat. Add a little olive oil and cook the patties for about 4-5 minutes on each side until golden brown.
- Meanwhile, toast the burger buns until golden.
- Assemble the burgers by spreading hummus on the bottom bun, topping with the eggplant patty, sliced avocado, tomato, and red onion. Finish with the top bun.
- Serve immediately with your choice of side.
