- Chickpeas - 400 grams (cooked)
- Almond flour - 50 grams
- Red onion - 50 grams (finely chopped)
- Garlic - 2 cloves (minced)
- Fresh cilantro - 30 grams (chopped)
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg - 1 large
- Olive oil - 2 tablespoons (for frying)
- Lettuce leaves - for serving
- Sliced tomatoes - for serving
- Sliced avocado - for serving
Steps
- In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth but still slightly chunky.
- Add the almond flour, chopped red onion, minced garlic, cilantro, cumin, coriander, paprika, cayenne pepper, salt, black pepper, and the egg to the mashed chickpeas. Mix until well combined.
- Form the mixture into 2 equal-sized patties.
- Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and heated through.
- Remove from the skillet and let them cool slightly before serving.
- Serve the chickpea burgers on lettuce leaves, topped with sliced tomatoes and avocado.
