Ingredients

  • Chickpeas - 400 grams (cooked)
  • Almond flour - 50 grams
  • Red onion - 50 grams (finely chopped)
  • Garlic - 2 cloves (minced)
  • Fresh cilantro - 30 grams (chopped)
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1 large
  • Olive oil - 2 tablespoons (for frying)
  • Lettuce leaves - for serving
  • Sliced tomatoes - for serving
  • Sliced avocado - for serving

Steps

  1. In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth but still slightly chunky.
  2. Add the almond flour, chopped red onion, minced garlic, cilantro, cumin, coriander, paprika, cayenne pepper, salt, black pepper, and the egg to the mashed chickpeas. Mix until well combined.
  3. Form the mixture into 2 equal-sized patties.
  4. Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and heated through.
  5. Remove from the skillet and let them cool slightly before serving.
  6. Serve the chickpea burgers on lettuce leaves, topped with sliced tomatoes and avocado.
