Ingredients

  • Carrots - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Peel and chop the carrots into small pieces for even cooking.
  2. In a pot, bring water to a boil and add the carrots. Cook for about 15 minutes or until tender.
  3. Drain the carrots and let them cool slightly.
  4. In a blender or food processor, combine the cooked carrots, olive oil, minced garlic, cumin, cayenne pepper, paprika, salt, black pepper, and lemon juice.
  5. Blend until smooth, adjusting the consistency with a little water if necessary.
  6. Transfer the dip to a serving bowl and stir in the chopped cilantro.
