Ingredients

  • Almond flour - 200 grams
  • Mozzarella cheese (shredded) - 150 grams
  • Cream cheese - 50 grams
  • Egg - 1 large
  • Zucchini - 100 grams, thinly sliced
  • Red bell pepper - 100 grams, diced
  • Red onion - 50 grams, thinly sliced
  • Olive oil - 2 tablespoons
  • Harissa paste - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix almond flour, mozzarella cheese, cream cheese, and egg until a dough forms.
  3. Spread the dough onto a parchment-lined baking sheet, shaping it into a circle about 1 cm thick.
  4. Bake the crust in the preheated oven for 10-12 minutes or until golden brown.
  5. While the crust is baking, toss the zucchini, red bell pepper, and red onion with olive oil, cumin, coriander, paprika, salt, and pepper.
  6. Spread the seasoned vegetables on a baking tray and roast in the oven for 10 minutes.
  7. Remove the crust from the oven, spread harissa paste evenly over the top, and layer the roasted vegetables.
  8. Return the pizza to the oven and bake for an additional 5-7 minutes.
  9. Remove from the oven and garnish with fresh cilantro before serving.
