- Egg - 1 large
- Zucchini - 100 grams, thinly sliced
- Red bell pepper - 100 grams, diced
- Red onion - 50 grams, thinly sliced
- Olive oil - 2 tablespoons
- Harissa paste - 2 tablespoons
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Pepper - to taste
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, mix almond flour, mozzarella cheese, cream cheese, and egg until a dough forms.
- Spread the dough onto a parchment-lined baking sheet, shaping it into a circle about 1 cm thick.
- Bake the crust in the preheated oven for 10-12 minutes or until golden brown.
- While the crust is baking, toss the zucchini, red bell pepper, and red onion with olive oil, cumin, coriander, paprika, salt, and pepper.
- Spread the seasoned vegetables on a baking tray and roast in the oven for 10 minutes.
- Remove the crust from the oven, spread harissa paste evenly over the top, and layer the roasted vegetables.
- Return the pizza to the oven and bake for an additional 5-7 minutes.
- Remove from the oven and garnish with fresh cilantro before serving.
