Ingredients
- Sweet potatoes - 400 grams
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Ground coriander - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Peel the sweet potatoes and cut them into 2 cm cubes.
- In a large bowl, combine the cubed sweet potatoes with olive oil, cumin, cinnamon, paprika, coriander, salt, and black pepper. Toss well to coat the potatoes evenly.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for about 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized, stirring halfway through.
- Once done, remove from the oven and drizzle with fresh lemon juice.
- Garnish with chopped cilantro before serving.
