Ingredients

  • Sweet potatoes - 400 grams
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Ground coriander - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel the sweet potatoes and cut them into 2 cm cubes.
  3. In a large bowl, combine the cubed sweet potatoes with olive oil, cumin, cinnamon, paprika, coriander, salt, and black pepper. Toss well to coat the potatoes evenly.
  4. Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for about 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized, stirring halfway through.
  6. Once done, remove from the oven and drizzle with fresh lemon juice.
  7. Garnish with chopped cilantro before serving.
