- Raisins - 50 grams
- Onion - 1 medium (finely chopped)
- Garlic - 2 cloves (minced)
- Vegetable broth - 300 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons (chopped, for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the ground cumin, cinnamon, and turmeric, and cook for 1 minute to release the spices' aromas.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the spice mixture.
- Add the vegetable broth, chickpeas, raisins, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, garnish with chopped fresh cilantro, and serve warm.
