Ingredients

  • Basmati rice - 150 grams
  • Chickpeas - 100 grams (canned, drained and rinsed)
  • Raisins - 50 grams
  • Onion - 1 medium (finely chopped)
  • Garlic - 2 cloves (minced)
  • Vegetable broth - 300 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons (chopped, for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the ground cumin, cinnamon, and turmeric, and cook for 1 minute to release the spices' aromas.
  5. Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the spice mixture.
  6. Add the vegetable broth, chickpeas, raisins, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and has absorbed the liquid.
  7. Remove from heat and let it sit, covered, for an additional 5 minutes.
  8. Fluff the rice with a fork, garnish with chopped fresh cilantro, and serve warm.
