Ingredients
- Basmati rice - 150 grams
- Water - 300 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Raisins - 30 grams
- Cinnamon - 1/2 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 100 grams, cooked
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic, diced carrot, and diced red bell pepper to the pot. Cook for another 5 minutes until the vegetables are softened.
- Stir in the raisins, cinnamon, cumin, turmeric, salt, and black pepper, cooking for 1-2 minutes to release the spices' aromas.
- Drain and add the soaked rice to the pot, stirring well to combine with the vegetables and spices.
- Pour in the 300 milliliters of water and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and water is absorbed.
- Once cooked, fluff the rice with a fork and gently stir in the cooked chickpeas and chopped fresh parsley. Serve warm.
