Ingredients

  • Basmati rice - 150 grams
  • Water - 300 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Raisins - 30 grams
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas - 100 grams, cooked
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic, diced carrot, and diced red bell pepper to the pot. Cook for another 5 minutes until the vegetables are softened.
  4. Stir in the raisins, cinnamon, cumin, turmeric, salt, and black pepper, cooking for 1-2 minutes to release the spices' aromas.
  5. Drain and add the soaked rice to the pot, stirring well to combine with the vegetables and spices.
  6. Pour in the 300 milliliters of water and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and water is absorbed.
  7. Once cooked, fluff the rice with a fork and gently stir in the cooked chickpeas and chopped fresh parsley. Serve warm.
