- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Yogurt (unsweetened, full-fat) - 100g (for dipping sauce)
- Mint leaves - 1 tablespoon, chopped (for dipping sauce)
Steps
- In a bowl, combine olive oil, minced garlic, cumin, coriander, paprika, cinnamon, turmeric, salt, black pepper, and lemon juice to create the marinade.
- Clean the quails and make shallow cuts on the skin to allow the marinade to penetrate; then coat the quails thoroughly with the marinade.
- Cover the marinated quails and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
- Preheat your grill or BBQ to medium-high heat.
- Remove the quails from the marinade and allow excess marinade to drip off.
- Grill the quails for about 15-20 minutes, turning occasionally until they are cooked through and have a nice char.
- While the quails are grilling, mix the yogurt with chopped mint leaves and a pinch of salt in a small bowl to create the dipping sauce.
- Once cooked, remove the quails from the grill and let them rest for 5 minutes before serving.
- Serve the grilled quails with the mint yogurt dipping sauce and garnish with fresh cilantro.
