Ingredients

  • Quail - 4 whole (about 300g each)
  • Olive oil - 4 tablespoons
  • Garlic - 4 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Yogurt (unsweetened, full-fat) - 100g (for dipping sauce)
  • Mint leaves - 1 tablespoon, chopped (for dipping sauce)

Steps

  1. In a bowl, combine olive oil, minced garlic, cumin, coriander, paprika, cinnamon, turmeric, salt, black pepper, and lemon juice to create the marinade.
  2. Clean the quails and make shallow cuts on the skin to allow the marinade to penetrate; then coat the quails thoroughly with the marinade.
  3. Cover the marinated quails and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
  4. Preheat your grill or BBQ to medium-high heat.
  5. Remove the quails from the marinade and allow excess marinade to drip off.
  6. Grill the quails for about 15-20 minutes, turning occasionally until they are cooked through and have a nice char.
  7. While the quails are grilling, mix the yogurt with chopped mint leaves and a pinch of salt in a small bowl to create the dipping sauce.
  8. Once cooked, remove the quails from the grill and let them rest for 5 minutes before serving.
  9. Serve the grilled quails with the mint yogurt dipping sauce and garnish with fresh cilantro.
