- Pumpkin puree - 200g

- Red onion - 1 small, thinly sliced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 100g, cooked and drained
- Spinach - 100g, fresh
- Vegan cheese - 100g, shredded (optional)
- Fresh cilantro - a handful, chopped (for garnish)
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the pizza dough on a floured surface to your desired thickness and shape.
- Transfer the dough to a baking sheet lined with parchment paper.
- In a skillet, heat olive oil over medium heat and sauté the sliced red onion until soft, about 5 minutes.
- Add minced garlic, cumin, cinnamon, coriander, paprika, salt, and black pepper to the skillet, and cook for another 2 minutes until fragrant.
- Stir in the pumpkin puree and chickpeas, cooking until heated through, about 3 minutes.
- Spread the pumpkin mixture evenly over the pizza dough.
- Top with fresh spinach and sprinkle with vegan cheese if using.
- Bake in the preheated oven for 12-15 minutes or until the crust is golden and crisp.
- Remove from the oven, garnish with fresh cilantro, slice, and serve warm.
