  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, combine the cubed potatoes, olive oil, minced garlic, cumin, coriander, paprika, cinnamon, salt, and black pepper. Toss until the potatoes are evenly coated with the spices.
  3. Spread the seasoned potatoes onto a baking tray lined with parchment paper in a single layer.
  4. Roast the potatoes in the preheated oven for 20-25 minutes, or until they are golden brown and tender, stirring halfway through.
  5. Once cooked, remove the potatoes from the oven and drizzle with lemon juice. Toss gently to combine.
