Ingredients

  • Green lentils - 100 grams
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for 5-7 minutes until the vegetables are softened.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Stir in the diced tomato, cumin, coriander, cinnamon, paprika, and turmeric. Cook for 2-3 minutes until the tomatoes start to break down.
  4. Add the green lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 25-30 minutes, or until the lentils are tender.
  5. Season with salt and pepper to taste. If the soup is too thick, add a bit more broth or water to reach the desired consistency.
  6. Serve hot, garnished with fresh cilantro.
