- Green lentils - 100 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for 5-7 minutes until the vegetables are softened.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the diced tomato, cumin, coriander, cinnamon, paprika, and turmeric. Cook for 2-3 minutes until the tomatoes start to break down.
- Add the green lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 25-30 minutes, or until the lentils are tender.
- Season with salt and pepper to taste. If the soup is too thick, add a bit more broth or water to reach the desired consistency.
- Serve hot, garnished with fresh cilantro.
