Ingredients

  • Green or brown lentils - 100 grams
  • Red bell pepper - 1 medium, diced
  • Cucumber - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh cilantro - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Rinse the lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, then reduce the heat and simmer for about 20 minutes or until tender. Drain and let cool.
  2. In a large bowl, combine the diced red bell pepper, cucumber, red onion, chopped parsley, chopped cilantro, and halved cherry tomatoes.
  3. In a separate small bowl, whisk together the olive oil, lemon juice, ground cumin, ground coriander, paprika, salt, and black pepper to create the dressing.
  4. Add the cooled lentils to the bowl with the vegetables, then pour the dressing over the top. Toss everything gently to combine.
  5. Let the salad sit for at least 10 minutes to allow the flavors to meld before serving.
