- Green or brown lentils - 100 grams
- Red bell pepper - 1 medium, diced
- Cucumber - 1 medium, diced
- Red onion - 1 small, finely chopped
- Fresh parsley - 30 grams, chopped
- Fresh cilantro - 30 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 100 grams, halved
Steps
- Rinse the lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, then reduce the heat and simmer for about 20 minutes or until tender. Drain and let cool.
- In a large bowl, combine the diced red bell pepper, cucumber, red onion, chopped parsley, chopped cilantro, and halved cherry tomatoes.
- In a separate small bowl, whisk together the olive oil, lemon juice, ground cumin, ground coriander, paprika, salt, and black pepper to create the dressing.
- Add the cooled lentils to the bowl with the vegetables, then pour the dressing over the top. Toss everything gently to combine.
- Let the salad sit for at least 10 minutes to allow the flavors to meld before serving.
