Ingredients
- Brown lentils - 150 grams
- Water - 500 ml
- Red onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpea flour - 3 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons (for cooking)
- Burger buns - 2 (vegan)
Steps
- Rinse the brown lentils under cold water and then combine them with 500 ml of water in a pot. Bring to a boil, then reduce to a simmer and cook for about 20-25 minutes until tender. Drain any excess water and set aside to cool slightly.
- In a large mixing bowl, combine the cooked lentils, chopped onion, minced garlic, grated carrot, cumin, coriander, smoked paprika, cinnamon, salt, pepper, chickpea flour, and chopped parsley. Mash the mixture with a fork or potato masher until mostly smooth but still a bit chunky.
- Form the lentil mixture into two patties, ensuring they are compact. Place the patties on a plate and refrigerate for about 10-15 minutes to help them firm up.
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Once hot, carefully add the burger patties and cook for about 4-5 minutes on each side until they are golden brown and crispy.
- While the burgers are cooking, you can prepare a simple lemon tahini sauce by mixing 3 tablespoons of tahini, the juice of half a lemon, a pinch of salt, and a little water to reach your desired consistency.
- Serve the spiced lentil burgers on vegan buns, topped with the lemon tahini sauce and any additional toppings of your choice, such as lettuce, tomato, or cucumber.
