Ingredients

  • Brown lentils - 150 grams
  • Water - 500 ml
  • Red onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpea flour - 3 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons (for cooking)
  • Burger buns - 2 (vegan)

Steps

  1. Rinse the brown lentils under cold water and then combine them with 500 ml of water in a pot. Bring to a boil, then reduce to a simmer and cook for about 20-25 minutes until tender. Drain any excess water and set aside to cool slightly.
  2. In a large mixing bowl, combine the cooked lentils, chopped onion, minced garlic, grated carrot, cumin, coriander, smoked paprika, cinnamon, salt, pepper, chickpea flour, and chopped parsley. Mash the mixture with a fork or potato masher until mostly smooth but still a bit chunky.
  3. Form the lentil mixture into two patties, ensuring they are compact. Place the patties on a plate and refrigerate for about 10-15 minutes to help them firm up.
  4. Heat 2 tablespoons of olive oil in a skillet over medium heat. Once hot, carefully add the burger patties and cook for about 4-5 minutes on each side until they are golden brown and crispy.
  5. While the burgers are cooking, you can prepare a simple lemon tahini sauce by mixing 3 tablespoons of tahini, the juice of half a lemon, a pinch of salt, and a little water to reach your desired consistency.
  6. Serve the spiced lentil burgers on vegan buns, topped with the lemon tahini sauce and any additional toppings of your choice, such as lettuce, tomato, or cucumber.
