- Lamb shoulder - 300 grams, cut into bite-sized pieces
- Basmati rice - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Green bell pepper - 1, diced
- Tomato - 1 medium, diced
- Cinnamon stick - 1
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Chicken or vegetable broth - 400 ml
- Fresh cilantro - for garnish
Steps
- Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until it becomes translucent.
- Add the minced garlic, diced carrot, and green bell pepper to the pot, and sauté for another 5 minutes until the vegetables soften.
- Stir in the lamb pieces, cinnamon stick, cumin, paprika, turmeric, salt, and black pepper, cooking until the lamb is browned on all sides, about 5-7 minutes.
- Add the diced tomato and cook for an additional 3 minutes until it softens.
- Pour in the chicken or vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for 20 minutes.
- After 20 minutes, add the basmati rice to the pot, stirring gently to combine. Cover and cook for another 15 minutes on low heat, or until the rice absorbs the liquid and is tender.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh cilantro and serve hot.
