Ingredients

  • Cauliflower - 300 grams (for crust)
  • Egg - 1 large
  • Almond flour - 50 grams
  • Olive oil - 1 tablespoon
  • Ground lamb - 250 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato paste - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese (optional) - 30 grams, crumbled

Steps

  1. Preheat the oven to 220°C (428°F).
  2. To make the cauliflower crust, steam the cauliflower florets until tender, about 5-7 minutes. Once cooked, let them cool slightly.
  3. In a food processor, pulse the steamed cauliflower until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
  4. In a mixing bowl, combine the cauliflower rice, almond flour, egg, olive oil, salt, and pepper. Mix until well combined.
  5. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1 cm thick. Bake for 15-20 minutes or until golden and firm.
  6. While the crust is baking, heat a skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
  7. Add the ground lamb to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  8. Stir in the cumin, coriander, paprika, cinnamon, salt, and pepper, cooking for an additional 2 minutes. Mix in the tomato paste until well incorporated.
  9. Once the crust is ready, remove it from the oven and spread the spiced lamb mixture evenly over the top.
  10. Return the pizza to the oven and bake for another 10 minutes.
  11. Remove from the oven and garnish with fresh parsley and crumbled feta cheese if using. Slice and serve warm.
