Ingredients
- Cauliflower - 300 grams (for crust)
- Egg - 1 large
- Almond flour - 50 grams
- Olive oil - 1 tablespoon
- Ground lamb - 250 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tomato paste - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese (optional) - 30 grams, crumbled
Steps
- Preheat the oven to 220°C (428°F).
- To make the cauliflower crust, steam the cauliflower florets until tender, about 5-7 minutes. Once cooked, let them cool slightly.
- In a food processor, pulse the steamed cauliflower until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine the cauliflower rice, almond flour, egg, olive oil, salt, and pepper. Mix until well combined.
- Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1 cm thick. Bake for 15-20 minutes or until golden and firm.
- While the crust is baking, heat a skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
- Add the ground lamb to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the cumin, coriander, paprika, cinnamon, salt, and pepper, cooking for an additional 2 minutes. Mix in the tomato paste until well incorporated.
- Once the crust is ready, remove it from the oven and spread the spiced lamb mixture evenly over the top.
- Return the pizza to the oven and bake for another 10 minutes.
- Remove from the oven and garnish with fresh parsley and crumbled feta cheese if using. Slice and serve warm.
