- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Lemon - 1, cut into wedges (for serving)
Steps
- In a mixing bowl, combine olive oil, minced garlic, cumin, coriander, paprika, cinnamon, cayenne pepper, salt, and black pepper to create a marinade.
- Place the quails in a large resealable plastic bag or shallow dish and pour the marinade over them, ensuring they are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat the grill to medium-high heat (about 200°C or 400°F).
- Remove the quails from the marinade and let any excess drip off. Discard the leftover marinade.
- Place the quails on the grill and cook for about 5-7 minutes per side, or until the internal temperature reaches 75°C (165°F) and the skin is crispy and golden brown.
- Once cooked, remove the quails from the grill and let them rest for a few minutes.
- Serve the grilled quails garnished with chopped parsley and lemon wedges on the side.
