Ingredients

  • Eggplant - 1 medium (approx. 250g)
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the grill to medium-high heat.
  2. Slice the eggplant into 1 cm thick rounds and place them in a large bowl.
  3. In a small bowl, mix together olive oil, ground cumin, smoked paprika, ground coriander, garlic powder, salt, and black pepper to create a marinade.
  4. Pour the marinade over the eggplant slices and toss until they are evenly coated.
  5. Let the eggplant marinate for at least 10 minutes to absorb the flavors.
  6. Place the marinated eggplant slices on the grill and cook for about 4-5 minutes on each side, or until they are tender and have nice grill marks.
