- Eggplant - 1 medium (about 250 grams)

- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon

- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 100 grams, crumbled
- Tomato sauce - 100 grams
- Mozzarella cheese - 100 grams, shredded
Steps
- Preheat the oven to 220°C (428°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let sit for 15 minutes to draw out moisture.
- Rinse the eggplant slices under cold water, pat dry with paper towels, and place them on a baking sheet.
- Drizzle 1 tablespoon of olive oil over the eggplant slices, then sprinkle with ground cumin, ground coriander, paprika, black pepper, and mix well.
- Roast the eggplant in the preheated oven for 20 minutes, flipping halfway through until tender and slightly caramelized.
- While the eggplant is roasting, roll out the pizza dough on a lightly floured surface to your desired thickness.
- Transfer the rolled-out dough to a pizza stone or baking sheet lined with parchment paper.
- Spread the tomato sauce evenly over the dough, leaving a small border around the edges.
- Once the eggplant is done roasting, arrange the slices on top of the tomato sauce.
- Sprinkle the shredded mozzarella cheese and crumbled feta cheese evenly over the eggplant.
- Bake the pizza in the oven for 12-15 minutes or until the cheese is bubbly and the crust is golden brown.
- Remove the pizza from the oven, garnish with chopped fresh parsley, slice, and serve hot.
