Ingredients

  • Pizza dough - 200 grams
  • Eggplant - 1 medium (about 250 grams)
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 100 grams, crumbled
  • Tomato sauce - 100 grams
  • Mozzarella cheese - 100 grams, shredded

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let sit for 15 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water, pat dry with paper towels, and place them on a baking sheet.
  4. Drizzle 1 tablespoon of olive oil over the eggplant slices, then sprinkle with ground cumin, ground coriander, paprika, black pepper, and mix well.
  5. Roast the eggplant in the preheated oven for 20 minutes, flipping halfway through until tender and slightly caramelized.
  6. While the eggplant is roasting, roll out the pizza dough on a lightly floured surface to your desired thickness.
  7. Transfer the rolled-out dough to a pizza stone or baking sheet lined with parchment paper.
  8. Spread the tomato sauce evenly over the dough, leaving a small border around the edges.
  9. Once the eggplant is done roasting, arrange the slices on top of the tomato sauce.
  10. Sprinkle the shredded mozzarella cheese and crumbled feta cheese evenly over the eggplant.
  11. Bake the pizza in the oven for 12-15 minutes or until the cheese is bubbly and the crust is golden brown.
  12. Remove the pizza from the oven, garnish with chopped fresh parsley, slice, and serve hot.
