  • Canned chickpeas - 400 grams, drained and rinsed
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Cayenne pepper - 1/4 teaspoon (adjust to taste)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Lemon - 1, cut into wedges (for serving)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine the drained and rinsed chickpeas with olive oil, ground cumin, paprika, cinnamon, cayenne pepper, salt, and black pepper.
  3. Toss the chickpeas until they are evenly coated with the spice mixture.
  4. Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy, shaking the baking sheet halfway through the cooking time.
  6. Remove from the oven and let cool slightly before serving.
  7. Garnish with chopped fresh parsley and serve with lemon wedges on the side.
