Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic, diced carrot, diced celery, and diced red bell pepper; cook for another 5 minutes until softened.
- Add the cumin, coriander, paprika, and turmeric to the pot; stir well to coat the vegetables in the spices and cook for 1 minute until fragrant.
- Pour in the vegetable broth and add the canned chickpeas (drained and rinsed) and tomato paste; stir to combine.
- Bring the soup to a simmer and let it cook for 15 minutes, allowing the flavors to meld together.
- Add the fresh spinach and cook for an additional 5 minutes until wilted.
- Season with salt, black pepper, and lemon juice to taste.
