  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Vegetable broth - 500 milliliters
  • Tomato paste - 2 tablespoons
  • Spinach (fresh) - 100 grams
  • Salt - to taste
  • Black pepper - to taste
  • Lemon (juiced) - 1
  • Fresh cilantro (for garnish) - a handful

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic, diced carrot, diced celery, and diced red bell pepper; cook for another 5 minutes until softened.
  4. Add the cumin, coriander, paprika, and turmeric to the pot; stir well to coat the vegetables in the spices and cook for 1 minute until fragrant.
  5. Pour in the vegetable broth and add the canned chickpeas (drained and rinsed) and tomato paste; stir to combine.
  6. Bring the soup to a simmer and let it cook for 15 minutes, allowing the flavors to meld together.
  7. Add the fresh spinach and cook for an additional 5 minutes until wilted.
  8. Season with salt, black pepper, and lemon juice to taste.
  9. Serve the soup hot, garnished with fresh cilantro.
