- Basmati rice - 150 grams
- Canned chickpeas - 240 grams (drained and rinsed)
- Vegetable broth - 400 milliliters
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrot, and red bell pepper. Cook for an additional 3-4 minutes until the vegetables begin to soften.
- Add the ground cumin, coriander, cinnamon, turmeric, paprika, salt, and black pepper. Stir well to coat the vegetables in the spices.
- Add the rinsed chickpeas and basmati rice to the saucepan, stirring to combine.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Once the rice is cooked, remove from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork before serving.
- Serve warm, garnished with fresh cilantro.
