Ingredients

  • Basmati rice - 150 grams
  • Canned chickpeas - 240 grams (drained and rinsed)
  • Vegetable broth - 400 milliliters
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, diced carrot, and red bell pepper. Cook for an additional 3-4 minutes until the vegetables begin to soften.
  3. Add the ground cumin, coriander, cinnamon, turmeric, paprika, salt, and black pepper. Stir well to coat the vegetables in the spices.
  4. Add the rinsed chickpeas and basmati rice to the saucepan, stirring to combine.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Once the rice is cooked, remove from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork before serving.
  7. Serve warm, garnished with fresh cilantro.
