- cooked chickpeas - 240 grams
- rolled oats - 50 grams
- red onion - 1 small, finely chopped
- garlic - 2 cloves, minced
- carrot - 1 medium, grated
- cumin powder - 1 teaspoon
- coriander powder - 1 teaspoon
- paprika - 1 teaspoon
- cinnamon - 1/2 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- fresh parsley - 2 tablespoons, chopped
- olive oil - 2 tablespoons (for cooking)
- whole grain burger buns - 2
- avocado - 1, sliced (for topping)
- lettuce leaves - 2 (for serving)
- tomato - 1, sliced (for serving)
Steps
- In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth but still slightly chunky.
- Add the rolled oats, chopped red onion, minced garlic, grated carrot, cumin powder, coriander powder, paprika, cinnamon, salt, black pepper, and chopped parsley to the mashed chickpeas. Mix until well combined.
- Form the mixture into two equal-sized patties, about 1.5 cm thick.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side until golden brown and crispy.
- While the patties are cooking, toast the whole grain burger buns in a separate skillet or oven until lightly browned.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the chickpea patty, slices of avocado, and tomato. Top with the other half of the bun.
- Serve immediately with your favorite dipping sauce or salad on the side.
