Ingredients

  • Cauliflower - 300 grams, cut into florets
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Tahini - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the cauliflower florets with olive oil, cumin, coriander, paprika, cinnamon, salt, black pepper, and garlic powder. Toss until the cauliflower is evenly coated.
  3. Spread the seasoned cauliflower on a baking sheet in a single layer.
  4. Roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and golden brown, stirring halfway through for even cooking.
  5. Once roasted, remove from the oven and let cool slightly.
  6. In a small bowl, mix tahini and lemon juice until smooth. If desired, add a bit of water to thin the sauce.
  7. Drizzle the tahini sauce over the roasted cauliflower and garnish with fresh parsley.
  8. Serve warm or at room temperature as a flavorful appetizer.
