Ingredients

  • Carrots - 300 grams, peeled and chopped

  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  4. Add the chopped carrots, cumin, coriander, cinnamon, salt, and pepper. Stir to coat the carrots with the spices.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the carrots are tender.
  7. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
  8. Stir in the lemon juice and adjust seasoning to taste.
  9. Serve hot, garnished with fresh cilantro.
