- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Add the chopped carrots, cumin, coriander, cinnamon, salt, and pepper. Stir to coat the carrots with the spices.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the carrots are tender.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
- Stir in the lemon juice and adjust seasoning to taste.
- Serve hot, garnished with fresh cilantro.
