Ingredients

  • Carrots - 500 grams, peeled and chopped

  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Ginger powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon (adjust to taste)
  • Black pepper - 1/4 teaspoon
  • Fresh lemon juice - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large pot, bring water to a boil and add the chopped carrots. Cook for about 15-20 minutes, or until the carrots are tender.
  2. Drain the carrots and return them to the pot. Add olive oil, cumin, coriander, cinnamon, ginger, salt, and black pepper.
  3. Using an immersion blender or a food processor, purée the mixture until smooth and creamy.
