Ingredients

  • Pizza dough - 250 grams
  • Carrots - 200 grams, grated

  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Pine nuts - 30 grams, toasted

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a mixing bowl, combine the grated carrots, olive oil, harissa paste, ground cumin, ground coriander, minced garlic, salt, and black pepper. Mix well until the carrots are evenly coated.
  3. Roll out the pizza dough on a floured surface to your desired shape and thickness, then transfer it to a baking sheet lined with parchment paper.
  4. Spread the spiced carrot mixture evenly over the pizza dough, leaving a small border around the edges.
  5. Sprinkle crumbled feta cheese over the carrot mixture.
  6. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
  7. Remove the pizza from the oven and drizzle with lemon juice, then sprinkle with chopped parsley and toasted pine nuts.
