Ingredients

  • Ripe tomatoes - 500 grams
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, chopped
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - a handful, chopped
  • Lemon juice - 1 tablespoon
  • Chili flakes - optional, to taste

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrot, and chopped bell pepper to the pot. Cook for another 5 minutes until the vegetables soften.
  3. Chop the ripe tomatoes and add them to the pot along with the vegetable broth. Stir well to combine.
  4. Sprinkle in the ground cumin, ground cinnamon, paprika, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes.
  5. After simmering, use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches and blend until smooth.
  6. Stir in the chopped fresh coriander and lemon juice. Adjust the seasoning if necessary.
  7. Serve hot, optionally garnished with extra coriander and a sprinkle of chili flakes for a kick.
