Ingredients
- Ripe tomatoes - 500 grams
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, chopped
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander - a handful, chopped
- Lemon juice - 1 tablespoon
- Chili flakes - optional, to taste
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and chopped bell pepper to the pot. Cook for another 5 minutes until the vegetables soften.
- Chop the ripe tomatoes and add them to the pot along with the vegetable broth. Stir well to combine.
- Sprinkle in the ground cumin, ground cinnamon, paprika, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes.
- After simmering, use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches and blend until smooth.
- Stir in the chopped fresh coriander and lemon juice. Adjust the seasoning if necessary.
- Serve hot, optionally garnished with extra coriander and a sprinkle of chili flakes for a kick.
