- Sesame paste (tahini) - 100 grams
- Water - 500 ml
- Vegetable broth - 250 ml
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Fresh parsley - for garnish
- Lemon juice - 1 tablespoon
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic; sauté until the onion is translucent, about 3-4 minutes.
- Add the diced carrot and zucchini to the pot, and cook for an additional 5 minutes, stirring occasionally.
- Stir in the ground cumin, ground coriander, cinnamon, salt, and black pepper; cook for 1 minute until fragrant.
- Pour in the vegetable broth and water, bring to a boil, then reduce the heat and let it simmer for 10 minutes, allowing the vegetables to soften.
- Add the tahini and lemon juice to the soup, stirring well to combine. Simmer for another 5 minutes, allowing the flavors to meld.
- Remove from heat and blend the soup until smooth using an immersion blender or transferring to a regular blender in batches.
- Serve hot, garnished with fresh parsley.
