Ingredients

  • Quinoa - 100 grams
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Vegetable broth - 750 ml
  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the quinoa under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Add the diced carrot, celery, and zucchini to the pot and cook for another 5 minutes, stirring occasionally.
  4. Stir in the diced tomato, ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper. Cook for an additional 2-3 minutes until the tomatoes soften.
  5. Add the rinsed quinoa and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 15-20 minutes, or until the quinoa is cooked and has absorbed most of the broth.
  6. Taste and adjust seasoning if necessary. Remove from heat and let it sit for a few minutes.
  7. Serve hot, garnished with freshly chopped parsley.
