  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon (adjust to taste)
  • Black pepper - 1/2 teaspoon (adjust to taste)
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrot, and diced potatoes to the pot. Sauté for an additional 5 minutes, stirring occasionally.
  3. Sprinkle in the ground cumin, ground coriander, paprika, salt, and black pepper, stirring to coat the vegetables evenly with the spices.
  4. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 20 minutes, or until the potatoes are tender.
  5. Using an immersion blender, carefully blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
