- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon (adjust to taste)
- Black pepper - 1/2 teaspoon (adjust to taste)
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and diced potatoes to the pot. Sauté for an additional 5 minutes, stirring occasionally.
- Sprinkle in the ground cumin, ground coriander, paprika, salt, and black pepper, stirring to coat the vegetables evenly with the spices.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 20 minutes, or until the potatoes are tender.
- Using an immersion blender, carefully blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
