  • Saffron threads - a pinch
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • White fish fillets (e.g., cod or haddock) - 200 grams, cut into chunks
  • Shrimp - 100 grams, peeled and deveined
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic, diced carrot, and diced celery to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Stir in the chopped tomatoes, fish stock, paprika, cumin, and saffron threads. Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
  4. Add the fish chunks and shrimp to the pot. Season with salt and black pepper to taste. Cook for an additional 5-7 minutes, or until the seafood is cooked through.
  5. Remove from heat and stir in the chopped parsley and lemon juice.
  6. Serve hot, garnished with extra parsley if desired.
