Ingredients

  • Leeks - 200 grams, cleaned and sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Vegetable broth - 500 milliliters
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the sliced leeks and minced garlic, sautéing for about 5 minutes until softened.
  2. Add the diced carrot and potato to the pot, stirring well to combine. Cook for an additional 5 minutes.
  3. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and add the ground cumin, ground coriander, salt, and black pepper.
  4. Cover the pot and let the soup simmer for about 20 minutes, or until the vegetables are tender.
  5. Remove the pot from heat and stir in the chopped parsley and lemon juice. Adjust seasoning if necessary.
  6. Using an immersion blender, blend the soup until smooth, or transfer to a blender in batches. Serve hot.
