- Leeks - 200 grams, cleaned and sliced

- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Vegetable broth - 500 milliliters
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large pot over medium heat. Add the sliced leeks and minced garlic, sautéing for about 5 minutes until softened.
- Add the diced carrot and potato to the pot, stirring well to combine. Cook for an additional 5 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and add the ground cumin, ground coriander, salt, and black pepper.
- Cover the pot and let the soup simmer for about 20 minutes, or until the vegetables are tender.
- Remove the pot from heat and stir in the chopped parsley and lemon juice. Adjust seasoning if necessary.
- Using an immersion blender, blend the soup until smooth, or transfer to a blender in batches. Serve hot.
