- Millet - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Zucchini - 1 small, diced
- Tomato - 1 medium, diced
- Vegetable broth - 800 milliliters
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 100 grams, cooked
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Rinse the millet under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Add the diced carrot and celery to the pot, cooking for about 5 minutes until they soften.
- Stir in the diced zucchini and tomato, cooking for an additional 5 minutes.
- Add the rinsed millet, vegetable broth, ground cumin, ground coriander, paprika, salt, and black pepper. Bring to a boil.
- Reduce the heat to low, cover, and let the soup simmer for 20-25 minutes, or until the millet is cooked through.
- Stir in the cooked chickpeas and chopped parsley, and simmer for another 5 minutes.
- Remove from heat, stir in the fresh lemon juice, and adjust seasoning if necessary.
- Serve hot, garnished with additional parsley if desired.
