- Canned chickpeas - 200 grams, drained and rinsed
- Vegetable broth - 500 ml
- Canned diced tomatoes - 200 grams
- Harissa paste - 1 tablespoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and cook for another 1 minute until fragrant.
- Add the diced carrot and celery, cooking for 5 minutes until slightly softened.
- Incorporate the red bell pepper and zucchini, cooking for an additional 5 minutes.
- Add the chickpeas, vegetable broth, diced tomatoes, harissa paste, cumin, coriander, paprika, salt, and black pepper.
- Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
