  • Celery - 1 stalk, diced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Canned chickpeas - 200 grams, drained and rinsed
  • Vegetable broth - 500 ml
  • Canned diced tomatoes - 200 grams
  • Harissa paste - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté for 3-4 minutes until translucent.
  3. Stir in the minced garlic and cook for another 1 minute until fragrant.
  4. Add the diced carrot and celery, cooking for 5 minutes until slightly softened.
  5. Incorporate the red bell pepper and zucchini, cooking for an additional 5 minutes.
  6. Add the chickpeas, vegetable broth, diced tomatoes, harissa paste, cumin, coriander, paprika, salt, and black pepper.
  7. Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.
  8. Taste and adjust seasoning if necessary.
  9. Serve hot, garnished with fresh parsley.
