- Green lentils - 100 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - for garnish
- Lemon - 1, cut into wedges
Steps
- Rinse the green lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the diced tomato, cumin, coriander, cinnamon, salt, and black pepper. Cook for 3-4 minutes until the tomato softens.
- Add the rinsed lentils and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30 minutes, or until the lentils are tender.
- Taste and adjust seasoning if necessary. If the soup is too thick, add a little more broth or water.
- Serve hot, garnished with chopped fresh parsley and a wedge of lemon on the side.
