Ingredients

  • Green lentils - 100 grams
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish
  • Lemon - 1, cut into wedges

Steps

  1. Rinse the green lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the diced tomato, cumin, coriander, cinnamon, salt, and black pepper. Cook for 3-4 minutes until the tomato softens.
  5. Add the rinsed lentils and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30 minutes, or until the lentils are tender.
  6. Taste and adjust seasoning if necessary. If the soup is too thick, add a little more broth or water.
  7. Serve hot, garnished with chopped fresh parsley and a wedge of lemon on the side.
