Ingredients

  • Dried fava beans - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stick, diced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Vegetable broth - 800 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced

Steps

  1. Soak the dried fava beans in water overnight. Drain and rinse before cooking.
  2. In a large pot, heat olive oil over medium heat. Add the diced onion, garlic, carrot, and celery. Sauté for about 5 minutes, until the vegetables are softened.
  3. Add the soaked fava beans, cumin, coriander, and paprika to the pot. Stir for 1-2 minutes until the spices are fragrant.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 40 minutes, or until the fava beans are tender.
  5. Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  6. Stir in the chopped parsley, and season with salt, black pepper, and lemon juice to taste.
  7. Serve hot, garnished with additional parsley if desired.
