- Dried fava beans - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stick, diced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Vegetable broth - 800 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, juiced
Steps
- Soak the dried fava beans in water overnight. Drain and rinse before cooking.
- In a large pot, heat olive oil over medium heat. Add the diced onion, garlic, carrot, and celery. Sauté for about 5 minutes, until the vegetables are softened.
- Add the soaked fava beans, cumin, coriander, and paprika to the pot. Stir for 1-2 minutes until the spices are fragrant.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 40 minutes, or until the fava beans are tender.
- Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Stir in the chopped parsley, and season with salt, black pepper, and lemon juice to taste.
- Serve hot, garnished with additional parsley if desired.
