- Watercress - 150g

- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Vegetable broth - 500ml
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sauté until the onion becomes translucent, about 5 minutes.
- Stir in the diced carrot and potato, cooking for another 5 minutes.
- Add the cumin and coriander, stirring well to coat the vegetables with the spices.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce heat to low and simmer for 15 minutes, or until the vegetables are tender.
- Add the watercress and cook for an additional 3-4 minutes until wilted.
- Remove from heat and blend the soup until smooth using an immersion blender or a regular blender.
- Season with salt and black pepper to taste, and stir in the lemon juice.
- Serve hot, garnished with fresh parsley.
