Ingredients

  • Watercress - 150g
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Vegetable broth - 500ml
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sauté until the onion becomes translucent, about 5 minutes.
  3. Stir in the diced carrot and potato, cooking for another 5 minutes.
  4. Add the cumin and coriander, stirring well to coat the vegetables with the spices.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce heat to low and simmer for 15 minutes, or until the vegetables are tender.
  7. Add the watercress and cook for an additional 3-4 minutes until wilted.
  8. Remove from heat and blend the soup until smooth using an immersion blender or a regular blender.
  9. Season with salt and black pepper to taste, and stir in the lemon juice.
  10. Serve hot, garnished with fresh parsley.
