Ingredients

  • Carrots - 400 grams, peeled and chopped
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Cayenne pepper - 1/4 teaspoon (optional for heat)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh lemon juice - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. In a pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Stir in the chopped carrots, ground cumin, ground coriander, ground ginger, cayenne pepper (if using), salt, and black pepper. Cook for about 2-3 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 15-20 minutes or until the carrots are tender.
  5. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender.
  6. Stir in the fresh lemon juice and adjust the seasoning if needed.
  7. Serve hot, garnished with fresh cilantro.
