Ingredients
- Carrots - 400 grams, peeled and chopped
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 500 milliliters
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground ginger - 1/2 teaspoon
- Cayenne pepper - 1/4 teaspoon (optional for heat)
- Salt - to taste
- Black pepper - to taste
- Fresh lemon juice - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- In a pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the chopped carrots, ground cumin, ground coriander, ground ginger, cayenne pepper (if using), salt, and black pepper. Cook for about 2-3 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 15-20 minutes or until the carrots are tender.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender.
- Stir in the fresh lemon juice and adjust the seasoning if needed.
- Serve hot, garnished with fresh cilantro.
