Ingredients
- Ripe tomatoes - 400 grams
- Red bell pepper - 1 medium (150 grams)
- Onion - 1 small (100 grams)
- Garlic - 2 cloves
- Olive oil - 2 tablespoons (30 ml)
- Smoked paprika - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Chili flakes - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat a grill or grill pan over medium-high heat.
- Slice the tomatoes and red bell pepper in half. Peel the onion and cut it into wedges.
- Drizzle the vegetables with 1 tablespoon of olive oil and season with salt and black pepper.
- Grill the tomatoes, red bell pepper, and onion until they are charred and softened, about 8-10 minutes, turning occasionally.
- While the vegetables are grilling, peel and mince the garlic.
- Once grilled, remove the vegetables from the heat and let them cool slightly.
- In a blender or food processor, combine the grilled tomatoes, red bell pepper, onion, minced garlic, smoked paprika, cumin powder, chili flakes, remaining olive oil, and lemon juice.
- Blend the mixture until smooth, scraping down the sides as needed. Adjust seasoning with additional salt, if necessary.
- Stir in the chopped cilantro and serve the chutney warm or at room temperature.
