Ingredients

  • Ripe tomatoes - 400 grams
  • Red bell pepper - 1 medium (150 grams)
  • Onion - 1 small (100 grams)
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons (30 ml)
  • Smoked paprika - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Chili flakes - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat a grill or grill pan over medium-high heat.
  2. Slice the tomatoes and red bell pepper in half. Peel the onion and cut it into wedges.
  3. Drizzle the vegetables with 1 tablespoon of olive oil and season with salt and black pepper.
  4. Grill the tomatoes, red bell pepper, and onion until they are charred and softened, about 8-10 minutes, turning occasionally.
  5. While the vegetables are grilling, peel and mince the garlic.
  6. Once grilled, remove the vegetables from the heat and let them cool slightly.
  7. In a blender or food processor, combine the grilled tomatoes, red bell pepper, onion, minced garlic, smoked paprika, cumin powder, chili flakes, remaining olive oil, and lemon juice.
  8. Blend the mixture until smooth, scraping down the sides as needed. Adjust seasoning with additional salt, if necessary.
  9. Stir in the chopped cilantro and serve the chutney warm or at room temperature.
