Ingredients

  • Olive oil - 1 tablespoon
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Zucchini - 1 small, diced
  • Chickpeas - 200 grams, cooked (or 1 can, drained)
  • Vegetable broth - 500 ml
  • Smen (fermented butter) - 1 tablespoon
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish
  • Lemon - 1, cut into wedges

Steps

  1. In a pot, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrot, and celery, cooking for another 5 minutes until softened.
  3. Stir in the diced zucchini and continue to sauté for an additional 3 minutes.
  4. Add the cooked chickpeas, vegetable broth, cumin, coriander, paprika, salt, and black pepper to the pot.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
  6. In the last 5 minutes of cooking, stir in the smen until melted and well incorporated.
  7. Remove from heat, and serve hot, garnished with fresh cilantro and lemon wedges on the side.
