Ingredients
- Olive oil - 1 tablespoon
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Zucchini - 1 small, diced
- Chickpeas - 200 grams, cooked (or 1 can, drained)
- Vegetable broth - 500 ml
- Smen (fermented butter) - 1 tablespoon
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
- Lemon - 1, cut into wedges
Steps
- In a pot, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and celery, cooking for another 5 minutes until softened.
- Stir in the diced zucchini and continue to sauté for an additional 3 minutes.
- Add the cooked chickpeas, vegetable broth, cumin, coriander, paprika, salt, and black pepper to the pot.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
- In the last 5 minutes of cooking, stir in the smen until melted and well incorporated.
- Remove from heat, and serve hot, garnished with fresh cilantro and lemon wedges on the side.
