- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Canned diced tomatoes - 400 grams
- Chickpeas - 200 grams, drained and rinsed
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Eggs - 4 large
- Feta cheese - 100 grams, crumbled
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and red bell pepper, and sauté until softened, about 5-7 minutes.
- Stir in the minced garlic, cumin, paprika, and cayenne, cooking for an additional 1-2 minutes until fragrant.
- Pour in the canned diced tomatoes and add the chickpeas. Season with salt and black pepper to taste.
- Bring the mixture to a simmer and cook for about 10-15 minutes, stirring occasionally, until it thickens slightly.
- Use a spoon to make four small wells in the sauce and crack an egg into each well.
- Cover the skillet and cook for about 5-7 minutes, or until the eggs are set to your liking.
- Remove from heat, sprinkle with chopped parsley and crumbled feta cheese before serving.
