Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Canned diced tomatoes - 400 grams
  • Chickpeas - 200 grams, drained and rinsed
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Eggs - 4 large
  • Feta cheese - 100 grams, crumbled

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and red bell pepper, and sauté until softened, about 5-7 minutes.
  3. Stir in the minced garlic, cumin, paprika, and cayenne, cooking for an additional 1-2 minutes until fragrant.
  4. Pour in the canned diced tomatoes and add the chickpeas. Season with salt and black pepper to taste.
  5. Bring the mixture to a simmer and cook for about 10-15 minutes, stirring occasionally, until it thickens slightly.
  6. Use a spoon to make four small wells in the sauce and crack an egg into each well.
  7. Cover the skillet and cook for about 5-7 minutes, or until the eggs are set to your liking.
  8. Remove from heat, sprinkle with chopped parsley and crumbled feta cheese before serving.
