Ingredients

  • Almond flour - 200 grams
  • Egg - 1 large
  • Psyllium husk - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Canned diced tomatoes - 400 grams
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Coriander - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk, salt, and egg. Mix until a dough forms.
  2. Knead the dough for a few minutes until smooth. Divide into small noodle-like shapes resembling spaghetti.
  3. Bring a pot of salted water to a boil, and gently drop in the almond flour noodles. Cook for about 3-5 minutes until they float. Drain and set aside.
  4. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent.
  5. Add canned diced tomatoes, cumin, paprika, coriander, and black pepper to the skillet. Simmer for 10-15 minutes until the sauce thickens.
  6. Stir in the cooked almond noodles and toss to coat them in the sauce. Cook for an additional 2-3 minutes.
