- Almond flour - 200 grams
- Egg - 1 large
- Psyllium husk - 1 tablespoon
- Salt - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Canned diced tomatoes - 400 grams
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Coriander - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled (optional)
Steps
- In a mixing bowl, combine almond flour, psyllium husk, salt, and egg. Mix until a dough forms.
- Knead the dough for a few minutes until smooth. Divide into small noodle-like shapes resembling spaghetti.
- Bring a pot of salted water to a boil, and gently drop in the almond flour noodles. Cook for about 3-5 minutes until they float. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent.
- Add canned diced tomatoes, cumin, paprika, coriander, and black pepper to the skillet. Simmer for 10-15 minutes until the sauce thickens.
- Stir in the cooked almond noodles and toss to coat them in the sauce. Cook for an additional 2-3 minutes.
- Garnish with fresh cilantro and crumbled feta cheese (if using) before serving.
