- Diced tomatoes - 400 grams can
- Vegetable broth - 500 ml
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 200 grams, cooked
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Sfenj (Moroccan doughnuts) - 2, cut into bite-sized pieces
Steps
- In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add minced garlic, carrot, celery, and red bell pepper to the pot. Cook for another 5 minutes until the vegetables begin to soften.
- Stir in the diced tomatoes, vegetable broth, cumin, coriander, paprika, salt, and black pepper. Bring the mixture to a boil.
- Reduce heat and let the soup simmer for 15 minutes, allowing the flavors to meld together.
- Add the cooked chickpeas to the pot and simmer for an additional 5 minutes.
- Stir in the chopped cilantro and lemon juice just before serving.
