  • Olive oil - 2 tablespoons

  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Red bell pepper - 1, diced
  • Diced tomatoes - 400 grams can
  • Vegetable broth - 500 ml
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas - 200 grams, cooked
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Sfenj (Moroccan doughnuts) - 2, cut into bite-sized pieces

Steps

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic, carrot, celery, and red bell pepper to the pot. Cook for another 5 minutes until the vegetables begin to soften.
  3. Stir in the diced tomatoes, vegetable broth, cumin, coriander, paprika, salt, and black pepper. Bring the mixture to a boil.
  4. Reduce heat and let the soup simmer for 15 minutes, allowing the flavors to meld together.
  5. Add the cooked chickpeas to the pot and simmer for an additional 5 minutes.
  6. Stir in the chopped cilantro and lemon juice just before serving.
  7. Ladle the soup into bowls and top with pieces of sfenj for a delightful finish.
