Ingredients

  • Almond flour - 100 grams
  • Coconut flour - 30 grams
  • Baking powder - 1 teaspoon
  • Egg - 1 large
  • Greek yogurt - 50 grams
  • Vanilla extract - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Erythritol - 2 tablespoons
  • Salt - a pinch
  • Oil for frying - 500 ml

Steps

  1. In a mixing bowl, combine the almond flour, coconut flour, baking powder, erythritol, cinnamon, and salt.
  2. In a separate bowl, whisk together the egg, Greek yogurt, and vanilla extract until smooth.
  3. Gradually add the wet ingredients to the dry ingredients and mix until a dough forms.
  4. Cover the dough and let it rest for 10 minutes to allow the ingredients to meld.
  5. Heat the oil in a deep pan over medium heat until it reaches 180°C (356°F).
  6. While the oil is heating, shape the dough into rings or balls, about the size of a golf ball.
  7. Once the oil is hot, carefully drop the shaped dough into the oil, frying in batches to avoid overcrowding.
  8. Fry each piece for about 2-3 minutes on each side, or until golden brown.
  9. Remove the doughnuts and place them on paper towels to absorb excess oil.
  10. Serve warm, optionally dusted with a little erythritol or cinnamon.
