- Almond flour - 100 grams
- Coconut flour - 30 grams
- Baking powder - 1 teaspoon
- Egg - 1 large
- Greek yogurt - 50 grams
- Vanilla extract - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Erythritol - 2 tablespoons
- Salt - a pinch
- Oil for frying - 500 ml
Steps
- In a mixing bowl, combine the almond flour, coconut flour, baking powder, erythritol, cinnamon, and salt.
- In a separate bowl, whisk together the egg, Greek yogurt, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients and mix until a dough forms.
- Cover the dough and let it rest for 10 minutes to allow the ingredients to meld.
- Heat the oil in a deep pan over medium heat until it reaches 180°C (356°F).
- While the oil is heating, shape the dough into rings or balls, about the size of a golf ball.
- Once the oil is hot, carefully drop the shaped dough into the oil, frying in batches to avoid overcrowding.
- Fry each piece for about 2-3 minutes on each side, or until golden brown.
- Remove the doughnuts and place them on paper towels to absorb excess oil.
- Serve warm, optionally dusted with a little erythritol or cinnamon.
