Sfenj
Sfenj are fluffy, deep-fried Moroccan doughnuts that are traditionally enjoyed for breakfast. This vegan version maintains the deliciously airy texture and is perfect for dipping in honey or enjoying with a sprinkle of sugar.

Ingredients
- All-purpose flour - 250 grams
- Warm water - 200 ml
- Instant yeast - 7 grams
- Sugar - 50 grams
- Salt - 5 grams
- Ground cinnamon - 1 teaspoon
- Vegetable oil (for frying) - 500 ml
Steps
- In a large mixing bowl, combine the flour, sugar, salt, and ground cinnamon. Mix well.
- In a separate bowl, dissolve the instant yeast in warm water and let it sit for about 5 minutes until frothy.
- Pour the yeast mixture into the flour mixture and mix until a sticky dough forms.
- Knead the dough in the bowl for about 5-7 minutes until it becomes smooth and elastic. If the dough is too sticky, add a little more flour.
- Cover the bowl with a damp cloth and let it rise in a warm place for about 1 hour, or until doubled in size.
- Once the dough has risen, heat the vegetable oil in a deep pan over medium heat.
- Wet your hands with water and take a small piece of dough, shaping it into a ring. Repeat with the remaining dough.
- Fry the dough rings in hot oil for about 2-3 minutes on each side, or until golden brown.
- Remove the Sfenj from the oil and drain on paper towels. Serve warm, dusted with powdered sugar or with a side of maple syrup.
