Ingredients
- Fresh sardines - 4 medium (around 300g)
- Fresh cilantro - 30g, chopped
- Fresh parsley - 30g, chopped
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Salt - 1 teaspoon
- Olive oil - 60ml
- Lemon juice - 30ml
- Lemon wedges - for serving
- Black pepper - to taste
Steps
- Clean and gut the sardines, then rinse them under cold water and pat dry with paper towels.
- In a bowl, mix together the chopped cilantro, chopped parsley, minced garlic, ground cumin, ground coriander, paprika, cayenne pepper, salt, olive oil, and lemon juice to create the chermoula marinade.
- Place the sardines in a shallow dish and pour the chermoula marinade over them, ensuring they are well coated. Allow them to marinate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat. Once hot, place the marinated sardines on the grill.
- Cook the sardines for about 3-4 minutes on each side, or until they are cooked through and have nice grill marks.
- Remove the sardines from the grill and let them rest for a couple of minutes before serving.
- Serve the sardines with lemon wedges on the side and drizzle with any leftover chermoula marinade.
