Ingredients

  • Fresh sardines - 4 medium (around 300g)
  • Fresh cilantro - 30g, chopped
  • Fresh parsley - 30g, chopped
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Salt - 1 teaspoon
  • Olive oil - 60ml
  • Lemon juice - 30ml
  • Lemon wedges - for serving
  • Black pepper - to taste

Steps

  1. Clean and gut the sardines, then rinse them under cold water and pat dry with paper towels.
  2. In a bowl, mix together the chopped cilantro, chopped parsley, minced garlic, ground cumin, ground coriander, paprika, cayenne pepper, salt, olive oil, and lemon juice to create the chermoula marinade.
  3. Place the sardines in a shallow dish and pour the chermoula marinade over them, ensuring they are well coated. Allow them to marinate for at least 15 minutes.
  4. Preheat a grill or grill pan over medium-high heat. Once hot, place the marinated sardines on the grill.
  5. Cook the sardines for about 3-4 minutes on each side, or until they are cooked through and have nice grill marks.
  6. Remove the sardines from the grill and let them rest for a couple of minutes before serving.
  7. Serve the sardines with lemon wedges on the side and drizzle with any leftover chermoula marinade.
