- Parsley - 30 grams, finely chopped
- Garlic - 3 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Olive oil - 3 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon wedges - for serving
Steps
- Clean the sardines by removing the heads and guts, then rinse them under cold water and pat dry with paper towels.
- In a bowl, combine the cilantro, parsley, garlic, cumin, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper to create the chermoula marinade.
- Add the cleaned sardines to the bowl and coat them evenly with the chermoula marinade. Cover and let marinate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Once hot, place the marinated sardines on the grill and cook for about 3-4 minutes on each side, or until the fish is cooked through and has nice grill marks.
- Serve the sardines hot with lemon wedges on the side.
