Ingredients

  • Fresh sardines - 400 grams (about 4 medium sardines)
  • Cilantro - 30 grams, finely chopped
  • Parsley - 30 grams, finely chopped
  • Garlic - 3 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon wedges - for serving

Steps

  1. Clean the sardines by removing the heads and guts, then rinse them under cold water and pat dry with paper towels.
  2. In a bowl, combine the cilantro, parsley, garlic, cumin, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper to create the chermoula marinade.
  3. Add the cleaned sardines to the bowl and coat them evenly with the chermoula marinade. Cover and let marinate for at least 15 minutes.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Once hot, place the marinated sardines on the grill and cook for about 3-4 minutes on each side, or until the fish is cooked through and has nice grill marks.
  6. Serve the sardines hot with lemon wedges on the side.
