  • Fresh sardines - 4 medium (about 250g)
  • Fresh cilantro - 30g, chopped
  • Fresh parsley - 30g, chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a bowl, combine chopped cilantro, parsley, minced garlic, cumin, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper to create the chermoula marinade.
  2. Clean the sardines by removing the heads and guts, then rinse them under cold water and pat them dry.
  3. Place the sardines in a shallow dish and pour the chermoula marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. Preheat a grill or a grill pan over medium-high heat.
  5. Once hot, grill the sardines for about 3-4 minutes on each side, or until they are cooked through and slightly charred.
  6. Remove the sardines from the grill and serve immediately with extra chermoula drizzled over the top.
