- Cayenne pepper - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- In a bowl, combine chopped cilantro, parsley, minced garlic, cumin, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper to create the chermoula marinade.
- Clean the sardines by removing the heads and guts, then rinse them under cold water and pat them dry.
- Place the sardines in a shallow dish and pour the chermoula marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.
- Preheat a grill or a grill pan over medium-high heat.
- Once hot, grill the sardines for about 3-4 minutes on each side, or until they are cooked through and slightly charred.
- Remove the sardines from the grill and serve immediately with extra chermoula drizzled over the top.
