Ingredients

  • canned sardines in olive oil - 200 grams
  • breadcrumbs - 50 grams
  • fresh parsley, chopped - 2 tablespoons
  • fresh cilantro, chopped - 2 tablespoons
  • garlic, minced - 2 cloves
  • ground cumin - 1 teaspoon
  • ground coriander - 1 teaspoon
  • paprika - 1 teaspoon
  • egg - 1 large
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • lemon zest - 1 teaspoon
  • olive oil - for frying

Steps

  1. In a bowl, combine the canned sardines (drained), breadcrumbs, chopped parsley, chopped cilantro, minced garlic, ground cumin, ground coriander, paprika, egg, salt, black pepper, and lemon zest.
  2. Mix everything together until well combined. You can use your hands for better mixing.
  3. Form the mixture into small balls, about the size of a golf ball.
  4. Heat olive oil in a frying pan over medium heat.
  5. Fry the sardine balls in batches, cooking for about 3-4 minutes on each side or until golden brown.
  6. Remove the balls from the pan and place them on paper towels to drain excess oil.
  7. Serve hot, accompanied by a side salad or dipping sauce.
