- canned sardines in olive oil - 200 grams
- breadcrumbs - 50 grams
- fresh parsley, chopped - 2 tablespoons
- fresh cilantro, chopped - 2 tablespoons
- garlic, minced - 2 cloves
- ground cumin - 1 teaspoon
- ground coriander - 1 teaspoon
- paprika - 1 teaspoon
- egg - 1 large
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- lemon zest - 1 teaspoon
- olive oil - for frying
Steps
- In a bowl, combine the canned sardines (drained), breadcrumbs, chopped parsley, chopped cilantro, minced garlic, ground cumin, ground coriander, paprika, egg, salt, black pepper, and lemon zest.
- Mix everything together until well combined. You can use your hands for better mixing.
- Form the mixture into small balls, about the size of a golf ball.
- Heat olive oil in a frying pan over medium heat.
- Fry the sardine balls in batches, cooking for about 3-4 minutes on each side or until golden brown.
